<p><strong><span style="font-family: arial, helvetica, sans-serif;"><span class="fontSize4">PA Made Cheese<br /></span></span></strong><span style="font-family: arial, helvetica, sans-serif;"><span class="fontSize4">&nbsp;&nbsp;<br />Pennsylvania is now home to a number of excellent artisanal cheese producers. &nbsp;These cheeses are sometimes hard to find, but are now available at the Farmers' Market Cooperative of East Liberty. &nbsp;Offering cheese at the market is</span></span><span style="font-family: arial, helvetica, sans-serif;"><span class="fontSize4">&nbsp;an expansion of the "direct from the farm" concept we have been promoting by bringing coffee in from the Kew Park farm in Jamaica, and the olive oil from small farms in California. So when you buy these cheeses you are supporting local family owned farm enterprises. &nbsp;<br /></span></span></p>
<p><span style="font-family: arial, helvetica, sans-serif;"><span class="fontSize4">We offer about a dozen cheeses every week, and supplement them with seasonal cheeses that will arrive every few weeks. &nbsp;We buy the cheeses in full wheels. &nbsp;Pieces are cut to order at the market. &nbsp;We also offer free samples to make sure you like the cheese before you buy it. &nbsp;</span></span></p>

<p class="MsoNormal"><span class="fontSize4"><span style="font-family: arial, helvetica, sans-serif;">Arsenal Cheese is owned and operated by Jonathan Gaugler and is located in Lawrenceville. &nbsp;Jonathan does not keep a herd in Lawrenceville (thankfully), but instead gets raw milk from Le-Ara Farm in Worthington, PA. &nbsp;Farmer Lara Shields and her herd of grass-fed cows produce a great rich cheesemilk. Jonathan uses the milk to make curds which he calls "Cannonball Curds." &nbsp;Curds are a fresh cheddar cheese- as style that is a staple of dairy heavy areas like Wisconsin and Vermnont. Fresh cheese curds are generally unavailable unless you&rsquo;re REALLY close to the dairy. &nbsp;They&rsquo;re salty, a little tart, and have a great chewy texture. Because Cannonball Curds come nugget-shaped, they do very well deep fried, stirred into soups or used in baked goods. But, they are excellent fresh as well. &nbsp;I like to serve them the way you would fresh mozzarella- &nbsp;with fresh tomatoes, basil, and California Olive Oil.</span></span></p>

The animals have freedom to be outdoors in the fresh air and sunshine. &nbsp;The cows are able to graze on tasty grass, and relax on green pastures. &nbsp;The Rices'&nbsp;make the cheese themselves on the farm. &nbsp;Great care is taken in the production and aging of the cheese. &nbsp;The cheese is allowed to form a natural rind as the wheels age in their climate controlled cellar. &nbsp;All this tender-loving care comes through in the flavor of the cheese.</span></span></p>

<p><span class="fontSize4" style="font-family: arial, helvetica, sans-serif;">At Common Folk, they like to focus their efforts on a small number of cheeses, but both are extremely good. &nbsp;Common Folk is a collaboration between two Amish families. &nbsp;Ivan Lapp raises and milks the cows. &nbsp;Amos Miller actually produces the cheese. &nbsp;They make a blue that is very soft and creamy. &nbsp;Many who have tried it have said its the best the have ever tasted. &nbsp;They also make a Jack cheese that has fresh mushrooms and leeks. &nbsp;It is very unusual and tasty.</span></p>

Nestled in the peaceful hills of Potter County, the Bachman's are dedicated to producing high-quality, hand made artisan cheeses. &nbsp;The cheeses are made on the farm using the all-natural, clean raw-milk, free from artificial growth hormones. &nbsp;The mountain spring water and lush green pastures on the farm give the milk a fresh and sweet flavor. &nbsp;The quality of the milk makes the cheese perfectly delicious. The cheese comes in these enormous 20+ pound wheels.</span></p>

<p><span class="fontSize4" style="font-family: arial, helvetica, sans-serif;">Hidden Hils Dairy is owned and operated by Lori Sollenberger and husband Rex Knepp. &nbsp;Lori is the daughter of Ray and Elaine Sollenberger who have maintained a herd of Jersey Cows on the farm dating back to 1955. &nbsp;In recent years, Lori and Rex began using the milk to make high quality artisan cheeses. All the cheese begins with Milk from the Jersey Cows. &nbsp;From April through October the cows enjoy wide open pastures and superb nutrition made possible by intensive grazing. &nbsp;During the winter months they are fed home grown grass and alfalfa hay. &nbsp;The cheese is made from raw milk and the wheels are aged a minimum of 60 days. &nbsp;The cheese looks beautiful and has a delicious taste.</span></p>

<p><span style="font-size: medium;"><strong>PA Made Cheese-</strong> Last Saturday we sold nearly all of the mushroom leek cheese from Common Folk Organics from Lancaster County.&nbsp;&nbsp;I guess people liked it.&nbsp; We got in lots of new cheese this week:<br /><br />- Fresh curds from Arsenal Cheese<br />- Luddington Lace Swiss from God's Country Creamery<br />- Chev and Feta from Riverview Dairy<br /><br /><span style="color: #ff0000; background-color: #ffffff;">Also please note that Dave Rice from Clover Creek Cheese Cellar will be making a visit to the market next Saturday May 12th.&nbsp; We are really excited to have Dave visit us at the market since he has such a large following of fans who love these cheese that he makes.&nbsp; I will have more details next week.</span><br /><br /></span></p>

The reason is that we are still in the process of transitioning to having beans roasted here locally vs., on the farm in Jamaica. <p><span style="font-size: medium; font-family: arial, helvetica, sans-serif;">I just have a brief update for this week. &nbsp;As I mentioned last week, we are all waiting for more locally grown items, but they are still trickling in slowly. &nbsp;Here is an update on events at the market this Saturday. </span><span style="font-size: medium; font-family: arial, helvetica, sans-serif;">&nbsp; A summary of the produce is at the bottom of the messsage.&nbsp;</span></p>
